(As usually) I'm on unpayed vacation until April. During the past week, while working harder and harder on my "cazzeggio" at home I discovered a cool kitchen tool. It's quite a strange story, my german flatmate, Claudia, bought it somewhere in the little city where I come from some years ago, it's nothing special, only a Bosh electric mixer, but it's magical in bakery!!!
In the last days I used to spend 1 hour everyday making marvellous homebrewed bread and focaccias. I started experimenting with everything we had in the kitchen: plain grain flou, corn flou, beans, wheat, lentils, etc...
...the results were astonishing! That simple tool (magical german engineering?) is the killer application for leavening bread, also my girfriend who was very skeptical about my cooking talent (my first prototype bread sucked) declared: "It's better than professional baker's one!!!"
